Thyme is a perennial herb with small scented leaves. Excellent used sparingly with poultry, meat and game, and in soups.
Thinly sow directly into finely raked, moist, warm soil covering lightly. Germination takes 7-21 days. Thin seedlings to 30cm between plants. Alternatively sow in a propagator indoors. transfer seedlings into pots and grow on prior to planting out May to June. Both leaves and shoots are aromatic. To dry thyme for winter use, tie and hang bundles in an airy shed or garage; when dry rub finely and store in air tight containers.
